I roasted an entire pepper with the the other veg and used that. Did you mean just a sliver of pepper? Oh well, it’s yummy anyways! Thanks!

I’ve added more oil and some chicken broth to thin it out a bit, but it’s needing a lot. And also, I substituted cauliflower rice for the quinoa. Have you ever tried this?
