I’ve been finding myself addicted to kale as of late. I just love how hearty it is. It’s funny to think that this salad powerhouse was once relegated as an inedible garnish. Your recipe celebrates kale just as it should be and I love everything about it. . .the pomegranate, the sweet potato, the healthy dressing. Mmm. It’s making me hungry.

Oh my! I always have these ingredients at hand in my kitchen! But I love the fact you incorporate the sweet potatoes and kale together in a salad! And I always love new recipes for healthy dressing. Cinnamon is different in a dressing. Sounds so good!
