I would use them instead of sugar or (gasp) Splenda.

First of all I love this cake idea, I am going to try it out this weekend, the flavors are so original!
I would love to try the coconut crystals, what a cool product! I am always trying to find alternative sweeteners for baked goods and I would love to try this in cookies, especially chocolate chip!
