I know you’re all looking for healthy gluten-free lunch ideas, aren’t you? It’s back-to-school season and everyone from the 5-year-old down the street to my corporate America neighbor wants a little yumminess for lunch tomorrow. I just know it! That’s why today, I’m sharing this super delicious veggie sandwich with you.
Well, before we dig into this sandwich, I’m going off on a little side note.
Just a tiny one.

I’ve been thinking a lot about goal setting lately and it seems that everyone I know who sets a goal – is attached to the outcome.
And I just think it’s interesting because it’s one thing to set a goal for yourself but it’s another to place your sense of value in how much you achieve.
Instead, I think doing the best we can at something… and then letting it go… is the best way to look at goals.
I think it’s more about having faith and trust in ourselves rather than focusing on the perfect outcome.
Anyway, back to my sammie!
This gluten-free veggie sandwich is delish. It’s super simple to make and tastes amazing. Fresh, whole ingredients that will put a big smile on your face.
So, set a goal with yourself to create healthy lunches everyday this month – but don’t beat yourself up if you slip or if you choose an unhealthy option. Just get back on track the next day and think about why you chose those not-so healthy options the day before so that next time around… you’ll be armed and ready with one of these sammies in your bag to dig into and enjoy.
Have faith.
Believe me.
Everyone seems to have their own favorite sandwich and this one is surely mine.

Ingredients
- 2 slices whole grain gluten-free bread toasted
- 3 Tbsp. hummus
- 1 Tbsp. pesto
- 1/3 cup thinly sliced organic carrots
- 1 cup organic sprouts
- 1/4 tsp. sea salt
- 1/4 tsp. pepper
Instructions

Spread 1 slice bread with hummus and the other slice with pesto. Top with carrots and sprouts. Sprinkle with sea salt and pepper. Place pesto slice on top of the hummus slice to form a sandwich. Slice in half and serve.
I love sprouts on sandwiches!

Ooh I LOVE a good veggie sammie and this one looks delish! BTW, I love the way you present your food. So pretty and earthy. Anyway, this makes me think a trip to Whole Foods might be in my immediate future.
