Here I am at our local Farmer’s Market right in Rockefeller Center at the heart of Manhattan.  This Farmer’s Market runs Monday thru Fridays during the summer and is a great spot to visit during my lunch break.

Veggies are low in calories and loaded with micronutrients, fiber, minerals, vitamins and phytochemicals…so go ahead and eat them until your heart’s content (exceptions: starches such as white potatoes and corn)…I eat a vast array of the rainbow in unlimited veggies each and everyday.  What’s the secret? Keep your veggies exciting by incorporating them into your morning smoothie, afternoon salad, evening soup and snack time crudites.

Start your breakfast, lunch and dinner with a serving of vegetables such as a large salad or crudites to increase nutrient intake and help control your appetite.

Dark Leafy Greens-

Bursting with Vitamins A, K and C, folate, magnesium, manganese, calcium and fiber.  Health Boosts: May promote eye health thanks to carotenoids (a group of pigments found mainly in green leafy veggies, tomatoes and carrots) and fight cancer.

Bok Choy-

Contains Vitamin C, folate, fiber and Calcium.  Health Boost: May help promote bone health and support immunity.

Brussels Sprouts-

Full of Vitamins A, K and C, manganese, folate, fiber, potassium and Vitamin B6.  Health Boost: Linked to reduce cancer risk, especially colon and breast cancers.

Radishes-

Full of folate, fiber and Vitamin C.  Health Boost: Helps with weight control and may help boost the immune system.

Bean Sprouts-

Soaring with Vitamins C and K, folate, potassium and protein.  Healthy Boost: May boost satiety and assist in weight management.

Red Bell Peppers-

Chock full of Vitamins C, A, B6 and K, fiber, folate and manganese.  Health Boost: May promote heart health.  Vitamin C supports immunity; cartenoids may decrease risk of certain types of cancer.

  1. I’ve never met a veggie I didn’t like. My fav’s are All green leafy veggies, especially Bok Choy and Kale.
    How fun, I guess I’d make a bar with crunchy oats, a bit-o-honey, pumpkin seeds, apricot and dried figs.

  3. oh man, I am getting way too into this website! i can’t decide between a datey bar with cranberries, walnuts, and possibly chocolate chips and a pumpkin spice bar with oaty bar, pumkin spice, pumpkin seeds, cranberries, and brown rice syrup… both look reaally good!

    with you talking about it I really wish there were more fresh outdoor markets around me. We have a few but none are close so i have to settle fo the regular old grocery store. There’s just a different feeling in the farmer’s market that’s so great

  9. Really, I love all veggies, but feel a bit deprived if I don’t have broccoli regularly.

    I went for the Chewy Core (w/ almond butter), Blueberries, Cashews, Maple Syrup, and Immunity Boost. That was fun!

  10. wow, the Element bar website is pretty cool. I’d like to try an Apricot & Walnut bar with pumpkin spice and whey (on a datey core). It sounds like a healthy, treat for after my workouts!

    I love roasted brussel sprouts. I’ve been on a big kick of eating kale lately after trying it for the first time. Its so quick to cook, and tasty too. I don’t know why most people haven’t tried kale.

  11. I love roasted Brussels sprouts, steamed kale and broccoli, and lettuce and spinach in my smoothies. We always eat a side of vegetables with dinner, or usually eat raw veggies with lunch.

    My Element Bars would contain bananas, cashew, dark chocolate, and dried cherries.

  12. I’m like Heather – I have actually made my own bar on the Element site but never actually ordered it. I would choose a crispy core w/ almond butter, cranberries, brown rice syrup, and a whey protein boost! (Ooh, now I really want this – even if I don’t win I will probably still order it – Haha!)

  13. I love bok choy, red bell peppers, and green leafy veggies. I never think to use bean sprouts though.

    I love playing around on the Element Bars site. I have never actually ordered though. My bar would be: crispy core, whey protein, almonds, cranberries, pumpkins spice, agave with fiber and omega boost.

    Now I just need someone to tell me if it would taste good 😉
