easy-thyme-roasted-mushrooms

Hello December. I love you.

Time to get my holiday baking (roasting and cookin’) on!

But before I get to the sweets, here’s a fun little side dish (or appetizer) you can nibble on in between your bites of holiday cookies. I’m pairing them with other roasted veggies, gluten-free crackers, roasted almonds, steamed asparagus and roasted hazelnuts for a vegetarian ‘Antipasto’ platter on Christmas Eve.

These may not be the pretties mushrooms you’ve ever seen but boy o’ boy are they tasty.

So tasty.

And super easy to make. Easy mushroom recipes… O yes.  What more can you ask for?

Thyme, olive oil, sea salt, pepper, button mushrooms. That’s all you need for this recipe.

I’m sure you have all of that in your fridge and pantry. Am I right?

Super duper simple and flavorful.

My family wanted seconds and begged me for the recipe but I didn’t share it with them. Hehehe.

I told them they’d have to wait until I released it today online.

I’m so silly.

Anyway, put the holiday cookies on the side and break out your ‘shrooms.

These babies are gunna rock your holiday stockings along with a whole bunch of other healthy (and gluten-free) pairing ideas I’ve created below with tea! Check out some of my healthy and tasty appetizer and side dish pairings you can serve for your upcoming holiday season. I know for sure I’ll be sippin’ on tea while I’m cooking Christmas dinner. I like to serve tea in a pitcher with ice cubes and fresh lemons and oranges for the holidays- the kids love it, it’s certified organic (YAY!!!) and there’s no added sugar so it’s a healthy (and organic) way to enjoy a non-alcoholic sipper when you need a break from your almond milk ‘egg-nog’!

Here are a few tea pairing ideas for you to serve at your holiday gatherings this season:

  • Take a few empty ice cube trays and pour in your favorite Honest Tea flavor with finely chopped fresh herbs, fresh cranberries and lemon zest then freeze until set and serve them in wine glasses with sparkling water for a festive sipper!
  • Pair organic jarred roasted red bell peppers with other fresh roasted veggies (like these mushrooms) along with broccoli, cauliflower, carrots, parsnips and rutabaga. Place them in a large bowl with cooked quinoa, millet or wild rice then toss with freshly squeezed lemon juice, olive oil, sea salt and freshly squeezed black pepper. Serve with Honest Tea’s Unsweetened Lemon Tea.
  • Make your own stuffed mushrooms like these Stuffed Mushrooms or just stuff the cavities of button mushrooms with cooked quinoa or brown rice and drizzle with olive oil, a dash of sea salt and pepper. Bake at 375 degrees F for 20 minutes or until mushrooms are tender and serve with Honest Tea’s Just Black Tea.
  • For an easy dessert treat, mix pumpkin puree with a dash of ground cinnamon, a drizzle of organic honey and a scoop of coconut milk yogurt or ice cream. Serve with Honest Tea’s Just Green Tea.
  • Mash 1 cup of frozen (and defrosted) peas with 1 tablespoon of finely chopped fresh basil and 2 teaspoons of freshly squeezed lime juice. Place in a bowl on a large platter along with sliced raw veggies or gluten-free crackers. Serve with Honest Tea’s Unsweetened Lemon Tea.

And…speaking of great holiday pairings, my friends at Honest Tea would like to supply you with a GIVEAWAY! A 30 day supply of  Unsweetened Lemon Tea to pair with my Easy Thyme Roasted Mushrooms; you can sip on this tea warm, at room temperature or chilled. I, personally love the Unsweetened Lemon Tea with these mushrooms because they’re both naturally sweet with a hint of lemon (and no sugars, chemicals or gunky additives). Not only do they pair perfectly together, you’ll stay refreshed for all through the holidays, too! To enter, leave a comment on this blog post telling me why you want to win and I’ll be picking one winner!

Enjoy.

  1. A chance for some Honest Tea – sign me up! I haven’t tried the Unsweet Lemon Tea as I’m still obsessed with the Peach tea. OH, and super excited to try the mushroom recipe. Thanks for sharing!

This recipe sounds great, my husband loves mushrooms and I know he would love this! WE do love Honest Tea, in the unsweetened kind. We don’t need all the extra sugar and it’s so good and refreshing!

i want to win because 1- i’m diabetic, and therefore can properly appreciate a drink not bogged down w sugar; 2- whenever i eat out, if it’s available i always opt for regular iced tea, anyway; and 3- omigaaawd, are you kidding?!? i LUUUUUUUV tea w lemon!!

oh! and also, you look so very fetching today! 😉

also, deepest apologies for the 1 star… cooked mushrooms are the DEVIL’S appetizer…:/

We love Honest Tea. My husband especially loves the lemon tea. This would be an awesome surprize for him if we won! He also likes mushroom dishes, so he’ll love the recipe too 🙂

  5. I would love to win this contest because I am recently discovering a healthier way to eat and this tea is INSPIRING!

  6. I’ve loved Honest Tea for years. It’s wonderful to have an unsweetened option to grab on the way out of the house!

  7. Amie:

No really compelling reason to win; other than that I’ve been drinking Honest Tea since 2002 (discovered it at Harris Teeter in Greensboro, N.C., while I was living there..). It is a wonderful drink..

Have been diagnosed with a body burden of mercury and lead (Sept. 2009!), for which I am now undergoing intravenous chelation therapy (in the arm!); have had 7 treatments since March 4th. It is refreshing to know there is a company out there like Honest Tea that from what I can tell is pretty much all natural. The lead is coming out of my body; however in the meantime it’s nice to know that there is an all natural beverage/product that will not “poison” me, any more than I’ve already been poisoned – so to speak!

Thank you for the contest…and may your health improve as well! 🙂

I’d love to win the 30 day supply of unsweetened Honest Tea for my mother. My elderly mother just came to live with us after my father died. She has an addiction to sickly sweetened iced tea. Unfortunately, we’ve just learned she has diabetes. My goal is to get her off the sweet stuff by getting her drinking delicious unsweetened Honest Tea. Thanks!

Tea pairing? Now that sounds interesting! I am not a wine drinker, but I am a “tea” lover. It never occurred to me to pair teas! I have a whole new mission for 2015! Finding the right tea to cook with and sip with food. Would love to kick the year off with unsweetened Honest Tea to expand my taste bud education! 🙂

  10. I want to win because I am limited in what I can drink as most of the drinks have sugar added, although natural. I’d like to try it with Truvia, cooking, and whatever else a chemist can think of. I want to experiment. And black tea has the most caffeine naturally for a tea – so a little kick too…. I live right by the headquarters and I don’t see any of the 0 calorie Honest Tea drinks in the local stores. I love everything you stand for and do in the community. Love the honesty experiments you run across the US… When I travel, I love seeing Honest Tea in rest stops all across the US and telling people I live right by the main office. Way to go Honest Tea!!!
