Hello December. I love you.
Time to get my holiday baking (roasting and cookin’) on!
But before I get to the sweets, here’s a fun little side dish (or appetizer) you can nibble on in between your bites of holiday cookies. I’m pairing them with other roasted veggies, gluten-free crackers, roasted almonds, steamed asparagus and roasted hazelnuts for a vegetarian ‘Antipasto’ platter on Christmas Eve.
These may not be the pretties mushrooms you’ve ever seen but boy o’ boy are they tasty.
So tasty.
And super easy to make. Easy mushroom recipes… O yes. What more can you ask for?
Thyme, olive oil, sea salt, pepper, button mushrooms. That’s all you need for this recipe.
I’m sure you have all of that in your fridge and pantry. Am I right?
Super duper simple and flavorful.
My family wanted seconds and begged me for the recipe but I didn’t share it with them. Hehehe.
I told them they’d have to wait until I released it today online.
I’m so silly.
Anyway, put the holiday cookies on the side and break out your ‘shrooms.
These babies are gunna rock your holiday stockings along with a whole bunch of other healthy (and gluten-free) pairing ideas I’ve created below with tea! Check out some of my healthy and tasty appetizer and side dish pairings you can serve for your upcoming holiday season. I know for sure I’ll be sippin’ on tea while I’m cooking Christmas dinner. I like to serve tea in a pitcher with ice cubes and fresh lemons and oranges for the holidays- the kids love it, it’s certified organic (YAY!!!) and there’s no added sugar so it’s a healthy (and organic) way to enjoy a non-alcoholic sipper when you need a break from your almond milk ‘egg-nog’!
Here are a few tea pairing ideas for you to serve at your holiday gatherings this season:
- Take a few empty ice cube trays and pour in your favorite Honest Tea flavor with finely chopped fresh herbs, fresh cranberries and lemon zest then freeze until set and serve them in wine glasses with sparkling water for a festive sipper!
- Pair organic jarred roasted red bell peppers with other fresh roasted veggies (like these mushrooms) along with broccoli, cauliflower, carrots, parsnips and rutabaga. Place them in a large bowl with cooked quinoa, millet or wild rice then toss with freshly squeezed lemon juice, olive oil, sea salt and freshly squeezed black pepper. Serve with Honest Tea’s Unsweetened Lemon Tea.
- Make your own stuffed mushrooms like these Stuffed Mushrooms or just stuff the cavities of button mushrooms with cooked quinoa or brown rice and drizzle with olive oil, a dash of sea salt and pepper. Bake at 375 degrees F for 20 minutes or until mushrooms are tender and serve with Honest Tea’s Just Black Tea.
- For an easy dessert treat, mix pumpkin puree with a dash of ground cinnamon, a drizzle of organic honey and a scoop of coconut milk yogurt or ice cream. Serve with Honest Tea’s Just Green Tea.
- Mash 1 cup of frozen (and defrosted) peas with 1 tablespoon of finely chopped fresh basil and 2 teaspoons of freshly squeezed lime juice. Place in a bowl on a large platter along with sliced raw veggies or gluten-free crackers. Serve with Honest Tea’s Unsweetened Lemon Tea.
And…speaking of great holiday pairings, my friends at Honest Tea would like to supply you with a GIVEAWAY! A 30 day supply of Unsweetened Lemon Tea to pair with my Easy Thyme Roasted Mushrooms; you can sip on this tea warm, at room temperature or chilled. I, personally love the Unsweetened Lemon Tea with these mushrooms because they’re both naturally sweet with a hint of lemon (and no sugars, chemicals or gunky additives). Not only do they pair perfectly together, you’ll stay refreshed for all through the holidays, too! To enter, leave a comment on this blog post telling me why you want to win and I’ll be picking one winner!
Enjoy.

I love Honest Tea. It is a healthy alternative to soda and sugary juices! I would love to win this! 🙂
Your pictures are beautifully shot. 🙂
I would love to win Honest Tea because they are the only brand I will drink. The others all overwhelm me as too sweet and have added things I can’t pronounce. Honest Tea has spoiled me and I’m okay with that.
I love honest tea more than the stars love the sky. Each day I wake up with one thing on my mind, where will my next honest tea come from. The local grocery store opens at 6, I am there at 5:45 am waiting to buy my honest tea before the day, I love them all. Everyday I spend my extra quarters on a great tea with honey just to push me through the day, honest tea is the spice of my life and if I won free honest tea… I would be so happy .. Honest tea is the calm sea in which I swim when the lighthouse can no longer guide me.
Recipe looks great! I would love to win the Honest Tea because it is one of the few drinks I enjoy besides water! I haven’t been able to afford buying it lately so thank you for this opportunity 🙂 Glad to have found your blog & will be checking out more of your recipes… they look perfect for me!
I would love to win because I’ll need to have plenty of Honest Teas to have with those yummy mushrooms that I’m going to make from your recipe above.
Lemon tea is one of my favorites. I drink a lot of Honest Tea during the year and this also helps detox because of the lemon and the healthy tea.
I just love your unsweetened Honest Tea. I cannot wait to make the ‘shrooms, I just need to go purchase some Thyme, but I have all the other items. Thanks for the recipe!! Happy Holiday!!
Honest tea is my favorite! I hope I win your giveaway!
Most of the teas out there are so sweet I just can’t drink them. I love Honest Tea and would love to win because it is the only brand of tea that I drink and enjoy .

I’m a tea lover and your tea is one of my favorite brands.
Finally I found a tea that is unsweetened and tastes amazing.
Thank you for the recipe, I think I’ll buy several different kinds of mushrooms instead of just one kind. Cannot wait.
Mm, those mushrooms look delicious! We love both mushrooms and Honest Tea in this house.
I really love Honest Tea. It isn’t too sweet. I can’t wait to try the mushrooms! Thanks for the recipe.
I am trying to lose weight. One of my goals is to quit drinking sodas, so I would love to have a 30 day supply of Honest Tea to drink to curb my beverage cravings!
I would love to win this. I am a big fan of honest tea. I started drinking tea when I was 5 and I love it. My parents always kept all kinds of it around the house. I drink tea every day and honest tea is my favorite. Gold peak tea tastes like chemicals and Lipton is too sweet, honest tea really is that, honestly tea. I also love tea because it is a much healthier alternative to coffee or juice and being healthy is something I always try to work at.
Thanks so much!
Ooh. I got so excited about the mushrooms, I forgot to say that I also love to share a tea with my daughter. We love all the flavors, and I would like to win, so I can share with more friends and family. 🙂
So happy to have found your website through my Honest Tea email. Love Honest Tea so much….I truly feel refreshed and ready to go on through my day once I’ve had my Honest Tea. Looking forward to preparing the mushroom recipe and a few others I just discovered on your site.
We have mushrooms as appetizers often, and I am always looking for a new recipe. Plus, simple is better. These mushrooms will be on the table for Christmas.
I Honestly love Raspberry Honest Tea – it is my ultimate favorite – has the right amount of sweetness and the flavor I just can’t enough of. It quenches my thirst when I am working outside and become thirsty or just when I want the ultimate drink – AUSSOME! The roasted mushrooms alos look great and I am excited to make and try those to go with a cold raspberry Honest tea.
