Hello December. I love you.

Time to get my holiday baking (roasting and cookin’) on!

But before I get to the sweets, here’s a fun little side dish (or appetizer) you can nibble on in between your bites of holiday cookies. I’m pairing them with other roasted veggies, gluten-free crackers, roasted almonds, steamed asparagus and roasted hazelnuts for a vegetarian ‘Antipasto’ platter on Christmas Eve.

These may not be the pretties mushrooms you’ve ever seen but boy o’ boy are they tasty.

So tasty.

And super easy to make. Easy mushroom recipes… O yes.  What more can you ask for?

Thyme, olive oil, sea salt, pepper, button mushrooms. That’s all you need for this recipe.

I’m sure you have all of that in your fridge and pantry. Am I right?

Super duper simple and flavorful.

My family wanted seconds and begged me for the recipe but I didn’t share it with them. Hehehe.

I told them they’d have to wait until I released it today online.

Anyway, put the holiday cookies on the side and break out your ‘shrooms.

These babies are gunna rock your holiday stockings along with a whole bunch of other healthy (and gluten-free) pairing ideas I’ve created below with tea! Check out some of my healthy and tasty appetizer and side dish pairings you can serve for your upcoming holiday season. I know for sure I’ll be sippin’ on tea while I’m cooking Christmas dinner. I like to serve tea in a pitcher with ice cubes and fresh lemons and oranges for the holidays- the kids love it, it’s certified organic (YAY!!!) and there’s no added sugar so it’s a healthy (and organic) way to enjoy a non-alcoholic sipper when you need a break from your almond milk ‘egg-nog’!

Here are a few tea pairing ideas for you to serve at your holiday gatherings this season:

  • Take a few empty ice cube trays and pour in your favorite Honest Tea flavor with finely chopped fresh herbs, fresh cranberries and lemon zest then freeze until set and serve them in wine glasses with sparkling water for a festive sipper!
  • Pair organic jarred roasted red bell peppers with other fresh roasted veggies (like these mushrooms) along with broccoli, cauliflower, carrots, parsnips and rutabaga. Place them in a large bowl with cooked quinoa, millet or wild rice then toss with freshly squeezed lemon juice, olive oil, sea salt and freshly squeezed black pepper. Serve with Honest Tea’s Unsweetened Lemon Tea.
  • Make your own stuffed mushrooms like these Stuffed Mushrooms or just stuff the cavities of button mushrooms with cooked quinoa or brown rice and drizzle with olive oil, a dash of sea salt and pepper. Bake at 375 degrees F for 20 minutes or until mushrooms are tender and serve with Honest Tea’s Just Black Tea.
  • For an easy dessert treat, mix pumpkin puree with a dash of ground cinnamon, a drizzle of organic honey and a scoop of coconut milk yogurt or ice cream. Serve with Honest Tea’s Just Green Tea.
  • Mash 1 cup of frozen (and defrosted) peas with 1 tablespoon of finely chopped fresh basil and 2 teaspoons of freshly squeezed lime juice. Place in a bowl on a large platter along with sliced raw veggies or gluten-free crackers. Serve with Honest Tea’s Unsweetened Lemon Tea.

  1. Preheat oven to 450 degrees F.
  2. In a large bowl, gently toss mushrooms with oil, thyme, sea salt and pepper to coat mushrooms. Transfer to a rimmed baking sheet and spread mushrooms out in a single layer.
  3. Bake for 20 minutes or until tender.
  4. Remove from oven; set aside to cool for 5-10 minutes and serve warm.

    Since taking a nutrition class in college, I have made major changes to my eating habits. I have not touched a soda in years. When Honest Tea is an option I always try to take it, but as a recent college grad, I can’t always afford it.   4. Thanks for the recipe. Always looking for interesting ways to use mushrooms. I’d love to win because it would be such a “treat” for my husband and me. We are on a path to restoring ourselves to better health (and weight), which means no sugar, no caffeine, no wheat, and some other no-nos. My husband has successfully lost 35 lbs., me about 15. Anyway, having bottled, unsweetened tea to take with us to work, or when we are out doing errands would help ensure we get our required daily water intake – particularly during this busy season.     My 20 year old daughter, and 16 year old son LOVE Honest Tea, they keep telling me to try it, after reading this, I am going to try the unsweet lemon tea.. It is so hard finding a good drink when you are diabetic…

    Hi: I love unsweetened honest iced tea it is my favorite. I love the plastic bottles especially.
